Side Dishes

So you've got something on the grill or in the oven or in a pot, but what will you serve along with it?  Check out these quick and easy side dishes that will complement any meal.  The added bonus is that these are sure to make veggie lovers out of anyone who tries them.

GARLIC GREEN BEANS

Ingredients:

  • 1 tsp toasted sesame oil

  • 2 tbs water1 tsp garlic salt

  • 2 cups fresh, trimmed green beans

  • 1 tbs butter



Directions:

Place a large pan over high heat on the stove. When pan is hot, add water and sesame oil (be careful as it will spatter a bit). Immediately add green beans and sautee until cooked through, but still a bit crunchy. Season the beans with garlic salt and toss with butter.   Serve immediately.

STIR FRY VEGGIES

 

Ingredients:

1 tbsp coconut oil

1small yellow onion, sliced into strips

4 heads baby bok choy, chopped

6 fresh shiitake mushrooms, sliced

Sesame seeds



Directions:

Heat oil in a frying pan. Add onion, turn heat down and cook 5 minutes, stirring occasionally. Add shiitakes, bok choy, mirin and tamari. Cover and cook 3 minutes. Serve while hot!

BLACK AND WHITE SESAME SEE CARROT NOODLES

Ingredients:

  • 6-7 medium to large carrots

  • 1 tbsp. toasted sesame oil

  • 1 tbsp. black sesame seeds

  • 1 tbsp. toasted white sesame seeds

  • 2 tsp. salt

  • 2 tsp. pepper

  • 1 bunch thin sliced scallion (optional)

 

Directions:

Wash and peel the carrots.

 

Using the peeler continue to peel the carrots to make noodles (try to make the noodles as big/wide as possible).

 

Place the carrot noodles on a microwave safe plate and cover with plastic wrap.

 

Cook the carrots on high power for 2 minutes.

 

Heat a large skillet over high heat for 2 minutes. Add the toasted sesame oil and then the carrots drained from the plate. Turn heat down to medium high and the sesame seeds and sauté the noodles for 2 minutes.

 

After two minutes remove from the heat and add the scallions.

 

Serve immediately

CHARRED SCALLIONS
 
 

 

 

 

 

 

Ingredients

  • 3 bunches fresh scallions

  • 1 tbsp. olive oil

  • 1 tbsp. salt

  • 1 tbsp. black pepper


Directions

Heat your grill or indoor skillet/grill to high heat.

 

Lay out the scallions on a sheet tray and drizzle with olive oil, salt and pepper (evenly coat all of the scallions with the oil, salt and pepper with your hands).

 

Gently shake off excess oil and place on the grill. The outdoor grill with cook much faster.

 

You want an even char and that should take about 45 seconds per side outside and 2 minutes per side on indoor skillet/grill.

 

Serve immediately.
