April Showers Bring May Peas!

For a quick and easy dinner, marinate one chicken breast (cut into large chunks) in olive oil, minced garlic, lemon zest and chopped fresh basil for about 30 minutes. While that is marinating cook up your favorite pasta. Penne is a good choice I used Gemelli. Drain the pasta and save some of the pasta liquid. Blanche about a cup of fresh peas for approx three minutes in "almost boiling" water. Drain the peas and let them cool. At this point in a ...hot pan sauté one half of a large leak in olive oil until it is nice and soft. Add your chicken mixture and sauté until chicken is fully cooked. At this point return the pasta to the original pot add about 3 tablespoons of the pasta water and your chicken mixture. Cook over low heat for about five minutes so the flavors can meld then add the peas. Toss gently for two more minutes over low heat then transfer to serving platter. Top with fresh basil. Enjoy!
